The syrup we should have released in 1998. Except back then, we were no match for Tornade and Sour Puss shots. Then, one day during lockdown, a certain Jean-Paul dared to say on Zoom that he missed the taste of real raspberries. Good thing we do too.
Our fresh raspberries are first frozen to promote juice concentration. Then, the Quebec company Impress presses them into a creamy purée, which is mixed with lemon juice and sugar before straining. We decided to keep a little pulp in the syrup so we don't miss out on any of Grandma's jam memories. Because even our memories are flavorless and preservative-free.
A well-sour raspberry coulis that develops jammy notes. The finish is reminiscent of the astringency of fresh raspberry.
